Ingredients

- four slices of ginger
- five cloves of garlic
- about half of an onion
- green bean
- chicken breast or chicken thigh
For the chicken marinade
- soy sauce
- oyster sauce
- white pepper powder
- a little bit of sugar
- tiny bit of baking soda
- some corn starch
- water
- a touch of oil
For the cornstarch and water mixture
- some cornstarch
- cold water
For cooking
- some oil
- a little bit of salt
- sugar
- a little more oil
- a touch of rice wine
- regular soy sauce
- dark soy sauce
- a little bit of water
Instructions

- We will start by preparing four slices of ginger and five cloves of garlic.
- We will keep one of the garlic whole and finally means the other four.
- We will also need about half of an onion and cut them into bite-sized pieces like this.
- Chop off and discard both ends.
- And then cut the green beans into three inch sections.
- Cut the chicken into slices and then marinate them with soy sauce, oyster sauce, white pepper powder, a little bit of sugar, tiny bit of baking soda, some corn starch and water.
- Mix the chicken and marinate thoroughly and then mix in a touch of oil.
- Prepare some cornstarch and add some cold water to it.
- Then mix it up until there is no more clumps in the mixture.
- Now we are ready to cook, add some oil to a hot pan over medium heat.
- Then add the ginger slices and the whole garlic to the oil.
- Let the ginger and the garlic sizzle in the oil briefly to release their flavor.
- Then add a little bit of salt and sugar to the oil and immediately add the green beans.
- Now stir fry the green beans until you start to see wrinkles on them.
- When you see wrinkles on the outer layer of the green bean like this, we can remove them from the pan.
- Now turn the heat up to medium high and we will briefly stir fry the onion.
- Next, we will stir fry the chicken.
- Add a little more oil if needed.
- And add the chicken to the pan.
- Spread the chicken now and then add the minced garlic.
- Now stir fry the chicken until they are about 50% cooked.
- Then add a touch of rice wine.
- Continue to stir fry and once the rice wine has evaporate.
- Add some oyster sauce, regular soy sauce and dark soy sauce.
- Keep stir frying until the color of the chicken looks even.
- Then add a little bit of water to the pan.
- Now we can add a cornstarch and water mixture.
- Mix it up with the sauce and keep stirring the chicken as the sauce thickens.
- When all the chicken in the pan are coated with the sauce, we can add a green bean and onion back to the pan.
- Now give me a few quick taste to mix everything together and we are done.
