- Egg. You can make these vegan or egg-free by using a flax egg or an egg replacer.
- Oats that cook quickly. You can use rolled or old-fashioned oats, but the texture will be different.

- Set the oven at 350 degrees F. Line two baking sheets with parchment paper and set them aside.
- In a big basin, mash the bananas.
- Stir in the honey, egg, and vanilla until everything is well mixed.
- Mix in the oats, cinnamon, and sea salt until they are all mixed in.
- If you choose, add the mix-ins and stir until they are all mixed together.
- Use a 1 tablespoon measuring spoon or a 1 ½ TBS cookie scoop to measure out pieces of dough and put them on the prepared baking sheet, leaving about 2 inches between them.
- Put in the preheated oven for 12 to 15 minutes, or until the tops are just set and the bottoms are very lightly browned.
- Allow to cool on the baking sheet for 5 minutes before moving to a wire rack to cool all the way down.
