These Broccoli Chicken Fritters are very soft, juicy, and tasty. A simple chicken meal that just takes 30 minutes to cook. They are easy to make keto-friendly and are great as an appetizer for a lot of people or as a light meal or dinner.

You will definitely want to add this simple chicken fritters dish to your weekly menu! They are really juicy, easy to make, and great for putting on top of salads. They are so much fun for my kids.

You can serve these as an appetizer for your guests or make them for the kids as a light lunch. It has broccoli in it for extra fiber, but you can easily use cauliflower instead. Use almond flour instead of breadcrumbs* for a variation that is good for keto.

Ingredients

Ingredients for broccoli chicken fritters

  • 1 1/2 pounds of chicken breasts or ground chicken
  • 1 cup of Panko bread crumbs
  • 1 cup of broccoli that has been finely chopped
  • 2 eggs
  • 2 teaspoons of chopped dill
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 2 teaspoons of oil for frying

Instructions

  1. Put the 1 1/2 pound chicken breasts in a food processor after cutting them into pieces.
    For finely chopped chunks, pulse for roughly 1 minute. For coarsely ground meat, pulse for less time (be cautious not to turn the meat into a paste). When you pinch the meat, it should stay together. You could also use ground chicken instead.
  2. Next, hold the broccoli with the stem facing up and carefully cut the florets off with a sharp knife, making cuts down from the stem.
    Put a kettle of water on the stove and turn the heat up to medium-high. Put the 1 cup of finely chopped broccoli florets in a steam basket and set it on top of the water that is boiling.
    Put a lid on the broccoli and let it steam for 2 to 3 minutes. Take the broccoli off the stove and let it cool after it’s done. Cut it up into little pieces.
  3. Put the ground chicken, broccoli, 1 cup of Panko breadcrumbs, 2 eggs, 2 tablespoons of chopped dill, 1/2 teaspoon of onion powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper in a bowl.

  1. Mix the ingredients together with your clean hands until they are completely mixed together. Put some oil on your hands and pinch off a portion of the meat mixture. Then, make it into a tiny patty that is about 1/2 inch thick.
  2. Put 2 teaspoons of oil in a nonstick skillet over medium heat.
  3. Cook the patties on both sides for about 3 to 4 minutes, or until they are a lovely golden brown.
  4. Enjoy the fritters with your favorite dip!

Serving Size & Yield

Three fritters make up a serving.

Makes around 14 to 15 fritters.

Alternatives

  • Chicken: Use ground turkey or ground chicken.
  • For a keto-friendly version, you can use 1/2 cup of almond flour and 1/2 cup of parmesan cheese instead of breadcrumbs.
  • Instead of broccoli, try cauliflower.

Storage

Put leftovers in a jar and keep them in the fridge for up to five days. When you’re ready to eat, heat it up in the microwave. You can keep it in the freezer for up to three months.
