How to Make a High Protein Healthy Beef Stroganoff

Why You’ll Love This

One of the ways that we’re going to make this healthier and higher in protein is we’re going to substitute our ground beef with turkey breasts that we’re going to slice thinly and we’re also going to substitute sour cream for Greek yogurt.

It’s going to taste delicious. My mouth is already watering.

It adds a lot of protein from the egg into the noodle, making this packed with protein low in fat and absolutely delicious.

Ingredients for healthy stroganoff

Ingredients

  • 500 grams sliced turkey breast
  • fresh cracked black pepper
  • generous pinch of kosher salt
  • nonstick cooking spray
  • 2 tablespoons unsalted butter
  • onions
  • mushrooms
  • tiny little bit of kosher salt
  • 2 cloves of garlic
  • 1/2 cup beef broth
  • 1 1/2 cups beef broth
  • about a tablespoon Worcestershire Shire Sauce. I don’t know like six or seven glugs.
  • 2 tablespoons all-purpose flour
  • plain fat-free Greek yogurt
  • egg noodles
  • green onion

Step by step instructions for stroganoff

Instructions

  1. Let’s go ahead and prep our ingredients and get over to the cooked oven.
  2. We’re going to heat this over medium high heat and just give it a little spritz with our nonstick cooking spray.
  3. Once that gets up the temperature, we’re just going to add in our sliced turkey breast.
  4. We’re just going to make sure we spread this out. We don’t really want it all clumping up here.
  5. Now we’re just going to season this with some fresh cracked black pepper and a generous pinch of kosher salt.
  6. We’re going to let this cook for three to four minutes until it’s all cooked through and there’s no more pink left in.
  7. Making sure we stir in every minute or two.
  8. Let’s go ahead and pull this off onto a clean plate and set this aside.
  9. To start our vegetable sauce, we’re going to start with two tablespoons of butter.
  10. Go ahead and melt that down.
  11. Once that butter’s all melted down, we’re going to saute our onions.
  12. We’re going to stir these every minute or so for about three minutes.
  13. We’re going to add in our mushrooms and we’re going to cook this down for five to seven minutes.
  14. Mix it in with the onions.
  15. Just sprinkle them with a tiny little bit of kosher salt.
  16. We’re going to add in our two cloves of garlic and we’re just going to let that get to know each other in there.
  17. Give this a good stir and we’re going to want to stir this frequently.
  18. See all this good stuff on the bottom? This is called the fawn. This is going to add so much flavor to our food.
  19. What we’re going to do is we’re going to add half a cup of this beef broth and we’re just going to scrape up all that delicious goodness.
  20. Turn down your heat to a simmer and we’re just going to let this simmer while we prep the rest of our ingredients for our sauce.
  21. In a separate bowl, we’re going to add in one and a half cups of beef about a tablespoon of Worcestershire Shire Sauce.
  22. Then we’re going to whisk in two tablespoons of all-purpose flour.
  23. Give this a good mix until all the flour is dissolved and it makes a nice little slurry.
  24. Once most of the liquid has cooked out, we’re just going to add in this beef broth slurry.
  25. Bring this up to a boil and once it starts boiling, we’re going to turn it back down to a simmer for about five minutes to let it get nice and thick.
  26. The last thing that we have to do is add our creaminess. We’re going to use plain Greek yogurt for that.
  27. Stir this in until it’s well combined and we’re just going to finish this off by adding in our cooked turkey and all the juices from that.
  28. Give this another little stir here guys and then we’re going to let this sit for about a minute or so.
  29. One last taste test for seasoning.

Cooking Tips

  • Keep a close eye on this. Keep stirring it. We don’t want to overcook this turkey. If you’ve ever had dried turkey, it does not taste good.
  • We don’t want that garlic to burn. This should only take about 30 seconds.

Serving Suggestions

  • This recipe makes four servings.
  • We’re going to serve this on an egg noodle to the package instruction. This is about one cup of cooked egg noodle.
  • We’re going to top this with about a quarter of our stroganoff.
  • I’m just going to top this with a little bit of green onion.
