One Pot Italian Sausage and Spinach Pasta

Who isn’t then today you have come to the right place because I am sharing this absolutely amazing One pot Italian sausage and spinach pasta that is so super good and so simple to make.

This pasta dish is super flavorful but comes together in no time. It’s also a one pot pasta which means we are making it all in a single pan and there will be a lot fewer dishes to deal with which I am all about. I feel like the freshly grated Parmesan here just takes this dish from like a 10 to an 11 and a half. It makes it extra rich and creamy and adds another dimension of flavor to this already incredibly flavorful pasta guys. So simple so easy so flavorful all made in one pot. So dishes are gonna be a breeze.

Ingredients

  • a little bit of olive oil
  • my Italian sausage (chicken sausage, pork instead, mild, hot Italian sausage)
  • an onion
  • some garlic
  • some penne pasta (any kind of pasta)
  • some fire roasted tomatoes (regular diced tomatoes)
  • some homemade Italian seasoning (store bought)
  • water (optional liquid)
  • about four cups of chicken broth
  • some greens (baby spinach, baby kale, regular kale, frozen kale)
  • about half a cup freshly grated Parmesan cheese

Instructions

  1. Get started by heating up a nice big skillet like this over medium high heat.
  2. Heat up a little bit of olive oil in the bottom of my pan.
  3. Cook up my Italian sausage.
  4. Add my sausage to my pan just as soon as my oil is nice and hot.
  5. Break my sausage up with the side of my spoon.
  6. Let it cook away until it’s no longer pink, usually between say five and six minutes.
  7. Add an onion to my skillet just as soon as my sausage is cooked through.
  8. Cook that for an additional two to three minutes, just until that onion starts to soften up and my sausage starts getting nicely brown.
  9. Add some garlic to this as well.
  10. Let that get even more fragrant and wonderful after just about 15 or 30 seconds of that garlic being in the pan.
  11. Add our pasta to this.
  12. Top my pasta with some fire roasted tomatoes.
  13. Add some seasoning to this (homemade Italian seasoning).
  14. Add my liquid to this (chicken broth).
  15. Bring this mixture to a boil.
  16. Once it’s reached a boil, reduce my heat sort of medium and let this simmer away for between say 12 and 15 minutes, stirring it frequently until my pasta is totally tender.
  17. Add my finishing ingredients just as soon as that pasta is fully cooked.
  18. Add some greens to this (baby spinach).
  19. Add freshly grated Parmesan cheese just as soon as my spinach is nice and wilted.

Cooking Tips

You could use pork instead if you wanted to whatever you prefer.

If you wanted to make this nice and spicy go ahead and use a really nice hot Italian sausage. That would be amazing. I’ll just say if I was making it for just myself hot Italian sausage would be what was on the menu.

You could use really any kind of pasta you want in this recipe.

If you only have regular diced tomatoes, they will totally work that fire roasted is my jam. They just have so much more flavor a little bit of smokiness thanks to that fire roasting and some great color in texture.

You could always use store bought Italian seasoning if that’s what you have on hand. If you want to make your own It’s actually really easy to do and I have a great recipe for that. So you can take a look at that once you’re done watching this yumminus unfold.

I find a pasta dish like this is sort of the perfect place to hide those greens if you’ve got someone who’s a little reluctant to eat them because they sort of will down and sort of become one with the pasta, which I love.

You could add a little more a little less Parmesan cheese totally up to you.
