One Skillet Rotisserie Chicken Casserole
So about half this bag, this is rotisserie chicken, about half a rotisserie chicken. Alright, this is going to start heating up in just a moment, but I love dishes that can be all done in one skillet. So this is a one skillet, dinner here.

This is going to be a delicious casserole, mostly done over stove top in just a few minutes, and then we’re gonna pop it in the oven at the end, but not for very long, it’s pretty quick.

Ingredients

- about half a rotisserie chicken
- half a cup tomato sauce
- a third of a cup of salsa (medium)
- two teaspoons of paprika
- a teaspoon of chili powder
- a teaspoon of cumin
- a bit of pink Himalayan salt
- a splash of pepper
- about two teaspoons of garlic
- a can of black beans (rinsed)
- a heaping two cups of spinach
- two small flour tortillas (cut up)
- two small corn tortillas (cut up)
- a cup and a half medium cheddar cheese
- fresh cilantro
Instructions

- Go right in there with the tomato sauce.
- Add some salsa.
- Add a few spices: paprika, chili powder, and cumin.
- Give this a stir, get this nice and mixed together.
- Add just a bit of salt and pepper.
- Add some garlic in here.
- Mix that in so it gets well combined.
- Add our next ingredients.
- Add a can of black beans.
- Add some spinach.
- Give this a bit of a stir.
- Add two kinds of tortillas.
- Stir that all in there.
- Turn up my heat just a tad.
- Spread these tortillas around and make sure there’s a little bit of everything.
- Add our cheddar to the top.
- Sprinkle it all over the top of our casserole here.
- Turn off my heat here.
- Put it in at 375 for about seven to 10 minutes.
- Let it cool for a few minutes.
Cooking Tips
We’ve made this before with raw chicken, which just takes a little bit longer, but it was also delicious, so if you prefer to work with raw chicken versus rotisserie, you can do it that way.
If you have bigger tortillas, just use two, or maybe three, whatever looks good to you.
I like to hear that, that little bit of a sizzle in there. That means I know it’s cooking well.
You can use whatever cheese you prefer.
I think for me it’ll be closer to 10 because I really want that cheese to get bubbly.

I’m gonna add some fresh cilantro right on top because I love that flavor.
