Ingredients
  

  • 1 pound broccoli florets about 1 big head or 2 small heads
  • 2 tablespoons olive oil extra virgin is fantastic for flavor
  • 1/2 teaspoon salt kosher salt or sea salt tastes best
  • 1/4 teaspoon black pepper freshly ground gives it more flavor
  • 1 clove garlic chopped (optional, but strongly recommended for more taste)
  • Lemon wedges to serve optional

Method
 

  1. This is important for getting that crispy texture: preheat your oven.
  2. Set your oven at 400°F (200°C) to get it hot. Put parchment paper on a large baking sheet while the oven is heating up. This not only stops things from sticking, but it also makes cleaning up easy—it’s a win-win!
  3. Get the broccoli ready:
  4. Make sure to wash your broccoli well. Chop off the thick bottom of the stem, and then chop the head into little pieces. Don’t forget the stems! You can peel the harder outer skin off the stem and cut it into coins or spears. They roast well and stop food from going bad. What is the most crucial step here? Use paper towels to dry the broccoli fully. I can’t say this enough: dampness is the enemy of crispiness! The drier the broccoli, the more crunchy it will get.
  5. Give it a lot of flavor:
  6. Put the dried broccoli florets and stems in a big mixing dish. Pour a lot of olive oil over them. Evenly sprinkle with salt and black pepper that has just been ground. If you’re using garlic, this is the time to add the minced garlic. Mix everything together well, making sure that the oil and spices cover every piece of broccoli. You want every surface to have a chance to get crispy.
  7. Put on a baking sheet:
  8. Put the seasoned broccoli in a single, equal layer on the baking sheet that has been prepared. Don’t put too many things in the pan. If the florets are too close together, they will steam instead of roast, which will make the texture less than perfect. If you need to, use two baking sheets to make sure that each item has enough room to get kissed by the hot air in the oven.
  9. Baking:
  10. Put the baking sheet(s) in the oven that has already been heated and roast for 15 to 20 minutes. Watch it closely; ovens can be different! You want the broccoli to be tender-crisp, which means it still has a little bit of a bite. The edges of the florets should also become a gorgeous golden brown and get a little scorched. This charring is what gives it a lot of its taste!
  11. Serve and enjoy:
  12. Take the broccoli out of the oven when it is completely cooked. You can squeeze fresh lemon juice over the top right before you serve it if you want. The sharp acidity cuts through the richness and brings out the broccoli’s inherent sweetness. Serve right away as a tasty side dish.
